The travel/culinary series NEW SCANDINAVIAN COOKING features mouth-watering food and breathtaking scenery from northern Europe. “New Nordic Cuisine” is famous for its rich flavors and the finest local ingredients, producing an array of dishes sourced directly from farmers in the region.

Season 8 features new host, Niklas Ekstedt, a Swedish Michelin-starred chef, cookbook author and television host. Chef Niklas owns three top restaurants in Sweden and hosted the popular cooking series MAT ("food" in Swedish), as well as other culinary programs in his home country.

In the new season, chef Niklas introduces viewers to some of his favorite recipes, which are often infused by smoke or torched with fire — skills he has perfected in his Michelin-star restaurant Ekstedt in Stockholm, where no electricity is used for cooking. Only the open flames of wood ovens and gas appliances are used to create authentic Scandinavian flavors at his restaurant.

EPISODE GUIDE:

Episode 1: “Stockfish and Amber” airs Saturday, Jan. 26 at 1 p.m. - Niklas visits beautiful Lofoten, a string of islands that stretches into the North Atlantic in Northern Norway. He goes fishing for cod and cooks the fish with both inspiring recipes and fiery techniques.

Recipes: Pan fried cod and ember cooked leek; Birch smoked salted herring on flat bread; Stockfish-cakes with kale and red beet salad; and Cod medallions with hash browns and smoked roe

Episode 2: “Burning Water and Melted Butter” airs Saturday, Feb. 2 at 1 p.m. - Niklas travels by horse sleigh into the mountainous region of Røros, where he enjoys the culinary treats and sites that this old mining town has to offer.

Episode 3: “Flavor of Roasted Coffee” airs Saturday, Feb. 9 at 1 p.m. - Niklas investigates the most popular drink in Scandinavia, namely coffee. He wants to know more about his morning cup of coffee and meets up with some experts for this refreshing beverage, before he travels to Brazil where most of the world’s coffee originates.

Recipes: Swedish breakfast sandwich; Evergood cold brew; Affogato; Coffee cured cod; and Rye Sourdough bread

Episode 4: “Arctic Fire” airs Saturday, Feb. 16 at 1 p.m. - Niklas visits the island of Kjøllefjord in Finnmark, well above the Arctic Circle, and home to some of the world’s richest fisheries. Niklas meets up with three generations of fishermen and goes fishing for haddock.

Recipes: Seared haddock with flamed cabbage and king crab; Norwegian krumkake with cloudberries and sour cream; Fish ‘n mashed peas; and Cheviche with haddock and pickled tomatoes

Episode 5: “Hay Smoked Salmon” airs Saturday, Feb. 23 at 1 p.m. - Niklas takes us to the island of Lovund in Northern Norway, a community that has always relied on fishing and where this traditional way of life coexists with modern aquaculture. Niklas meets up with some locals and goes diving for scallops before he makes one of his favorite salmon dishes touched by smoke, Viking style.

Recipes: Sea urchin tacos with mahogany clams; Salmon tartar and woodfire seared scallops; and Hay-flamed salmon and cured salmon with white bean hot pot

Episode 6: “Campfire Fish” airs Saturday, March 30 at 1 p.m. (broadcast subject to change) - Niklas investigates the great variety of produce from the productive farmland in Eastern Norway. He also escapes to a small lake to fish for the Perch, a freshwater gamefish, and to enjoy good food by the campfire amidst the tranquility of nature.

Recipes: Juniper smoked perch and creamed chanterelles; Green vegetable juice; Grilled veal with vegetable noodles; Sugared blackberries with cardamom and birch milk; and Brussels sprouts salad with apple and roasted hazelnuts

Episode 7: “Roasted Coastal Lamb and Dried Kelp” airs Saturday, April 6 at 1 p.m. (broadcast subject to change) - Niklas travels to Austevoll, an island just outside Bergen in Western Norway, where he meets up with an award-winning chef. Niklas is introduced to the best produce of the season, along with coastal lamb and lobster.

Recipes: Lamb chops with plum chutney; Seaweed steamed monkfish with seasonal vegetables; and Juniper smoked lobster and flower sprouts

Episode 8: “Burning Sweet Desire” airs Saturday, April 13 at 1 p.m. (broadcast subject to change) - There is a distinct word in Swedish for having something sweet together with a cup of coffee, namely fika. In today’s episode, Niklas makes sweet buns at his restaurant in the middle of Stockholm and enjoys them with a cup of coffee, before he travels to South America to investigate the coffee and food traditions from these faraway places.
